“As neither of us had worked with Verdelho before, we were unaware of it being such an early ripening variety. Upon our first visit to the vineyard, after a recent return from Europe, we were surprised to find it was nearly ready for the picking. At the time, our new cellar consisted of a bucket, four walls and a spade. Suffice to say, chaos ensued…
A turbulent few days passed, but we still missed one vital ingredient: a press. Miraculously, a wise and crafty neighbour lent us his handmade basket press with almost no time to spare. It was crafted from the innards of a washing machine, two pieces of marine ply and car tire’s inner tube. It worked like a charm! And so, the Spin Cycle was born.”
Two components make up this varietal wine: 70% of the fruit was crushed, macerated overnight and pressed directly to aged barrels; 30% of the fruit was fermented in whole bunches for two weeks. The portions were blended once dry, and matured in old French oak for six months. The wine was neither fined nor filtered, and was bottled by hand without any addition of sulphur.
