This vintage was crafted combining the best old dry land farmed bush vine Swartland Steen – a 1972 climate grown on decomposed granite with iron-stone, the other planted in 1983 on decomposed schists in the shadow of Kasteelberg – while the remainder is from old bush vines sites in Stellenbosch grown in decomposed granitic sandstone soils. All fruit is hand harvested, allowed skin-contact in press, with a portion thereof cold fermented in stainless steel for a month or more using neutral yeasts, while another portion is fermented in old French oak with neutral yeasts & thereafter taken to old 228L puncheons. Each component was matured for six months on fine lees (sur lie), blended & bottled unfiltered to jam-pack in all the flavours of this concentrated vintage.
